With toasted vanilla, prominent oak notes and hints of dried fruits, the complexity is realized beyond the mid-palate as a combination of clove and dark roasted coffee come out to play.
The exact origins of Black corn are unclear, nevertheless it is an ancient variety grown by the Aztecs over 2,000 years ago, and used since ancient times in areas throughout South America, notably Peru. Black corn made its way into North American seed catalogues in the 1860s, and today, it is still considered to be a relatively uncommon variety outside of South America.
Black corn has jet black kernels with a slightly purplish hue.

Our premium Texas bourbon whiskey is the heart of this whiskey and is made from 70% Texas corn, 22% Pacific Northwest malted rye from Oregon & Washington, 8% Wyoming barley and a proprietary yeast recipe from Kentucky and Texas. Each bottle of Milam & Greene Triple Cask is a batch of three hand selected straight bourbon whiskies: our 2 to 3-year-old premium Texas bourbon for a pop of spice married with 3 to 4-year-old Tennessee whiskey for vanillas and fruits and 10 to 11-year-old Tennessee whiskey for structure and tannins. It is then proofed to taste and bottled on site.

Indiana Rye whiskey is brought to Texas where we batch it in our warehouse and finish it in old Port Wine Casks. The Texan sun influences the rate and strength of flavor imparted into the whiskey. Some casks take longer than others. The team tastes the whiskey finishing in the Port Wine Casks regularly until the optimal flavors are achieved. Casks are then batched together, tested regularly and proofed before bottling.

We are proud to introduce Milam & Greene Unabridged Volume 1, a new limited edition, blend of straight bourbon whiskies. To create this, Heather Greene, our CEO, Master Blender and author of “Whiskey Distilled: A Populist Guide to the Water of Life” called on two of her longtime friends and colleagues Noah Rothbaum and David Wondrich, whiskey experts and award-winning authors of “The Oxford Companion to Spirits and Cocktails”. The three tasted numerous bourbons from the Milam & Greene warehouses before finally selecting thirty-eight casks distilled across three different states with six different ages that make up this blend of straight bourbon whiskies. Only 66 bottles are available in Alberta.

Highland Single Malt Scotch Whisky
• The Loch Lomond Distillery can be traced back to 1814 when the first recorded whisky distillery was founded in Tarbet
• Relatively few paper records were kept in those days & the closing date of this distillery remains unclear
• The current Loch Lomond Distillery was built in 1964 by former owners of Littlemill distillery, in Bowling, a few miles up the road towards Glasgow Unique distilling and filtering systems; Fermented for 96 hrs (vs industry standard of 48 hrs) – results in a brighter, fruitier distillate
• Of the 133 distilleries currently operating in Scotland, Loch Lomond is the only distillery to house both grain and malt whisky production under the same roof (hence the “Glengarry” name for both the blended and single malts) while using four different types of stills (two types of pot stills, column stills and a “Coffey” still)
• One of only four distilleries to have its own full-time cooperage on site; this ensures full control from distillation to bottling & allows for better control & ability to re-char, refurbish and recondition barrel
• The Glengarry 12-Year-Old Single Malt is “non-chill filtered” and results in a richer mouthfeel & deeper flavor
• The Glengarry 12-Year-Old is 46% ABV/92 Proof
The responsibility of Glengarry whiskies at the Loch Lomond distillery falls onto master blender Michael Henry under the guidance of John Peterson
• Michael Henry is also master blender at Loch Lomond’s sister distillery, Glen Scotia, recently recognized as “Home to the World’s Best Whisky” following the Glen Scotia 25-Year-Old’s monumental victory at the 2021 San Francisco World Spirits Competition:
John Peterson has been in the industry for over forty years and has been the
mastermind behind the careful development & improvement coming from the distillery
• He explains, “our people are as vital to our brands as grain, malt and water. After all in whisky, there’s no substitute for a good eye, a subtle palate and an experienced nose.”
